SOUPS AND SAUCES

 

1st & Best WheyMilk produces a smooth body in most soups without masking the color.

The whey content of 1st & Best WheyMilk has a definite advantage over

protein (casein) in soups and sauces because of its emulsion capability.

Liquid 1st & Best WheyMilk (full strength, 1/2 cup powder to 4 cups water) makes

an excellent base for either hot or cold soups. For cold soup, add your favorite

cooked vegetables and blend in a blender for 15 seconds. Salt to taste and enjoy.

Note: Liquid 1st & Best WheyMilk full strength is 1/2 cup powder to 4 cups of water.

 

Basic White Sauce Mix

COMBINE 1 cup all-purpose flour, 2 teaspoons salt, 4 cups dry 1st & Best WheyMilk

CUT in 1 cup margarine or butter

STORE in refrigerator until needed.

To use: Thin sauce - 1/4 cup mix, 1 cup water

Medium sauce - 3/4 cup mix, 1 cup water

Thick sauce - 1 cup mix, 1 cup water

BLEND water into sauce mix, stirring well. BLEND in blender 30 seconds. COOK over medium heat, stirring occasionally until mixture comes to a boil. SIMMER 5 minutes or until thickened . If using microwave oven, pour into bowl, cook 10-15 minutes, stirring occasionally until thick.

To make a less sweet sauce, add butter milk mix 1/8 cup, to an equal volume of water. When smooth, pour into White sauce.

BUTTERLESS SAUCE MIX

Interchangeable with Basic Sauce Mix, but made without butter. Ideal for budget and weight watchers.

COMBINE 1 tablespoon butter flavoring, 3/4 cup all-purpose flour, 3 tablespoons cornstarch, 1 1/2 teaspoons yeast, 3 cups dry 1st & Best WheyMilk, 1 tablespoon salt.

This stores well on the shelf, and needs no refrigeration. However, it does have a greater tendency to lump than the Basic Saurce Mix.

To use, ADD water gradually to sauce mix or use blender to combine. To microwave, cook 10-15 minutes or unitl thick.

 

CHEESE SAUCE

Prepare Medium Sauce as above. As soon as sauce begins to thicken, turn off heat. ADD 1/2 cup grated cheese and 1/8 teaspoon cayenne or 1/4 teaspoon mustard(dry) for flavor. STIR until conbined.

 

CRAB BISQUE

MIX 2 cups thick 1st & Best WheyMilk Basic White Sauce or chicken boullion, 1-8 ounce can tomato paste

ADD 2-7 1/2 ounce cans crab meat (drained), 1/4 cup finely chopped onion, 1/4 cut finely chopped green pepper , 1/2 teaspoon salt.

HEAT 2 cups 1st & Best WheyMilk (regular strength)

COMBINE with crab-White Sauce Mixture. Heat and serve.

Yield: 6 - 8 servings

Note: For a thicker bisque, add 1 tablespoon flour.

 

GRAVY

BLEND 1 tablespoon dry 1st & Best WheyMilk, 2 tablespoons cooled pan drippings, 2 tablespoons flour.

ADD gradually 1 cup rich meat-flavored broth, salt and pepper to taste.

The following herbs are especially tasty in meat broths: poultry-parsley, sage, thyme,bay; beef - basil, parsley, marjoram; fish - parsley , tarragon.

 

SWEET SAUCES

Sweetened condensed 1st & Best WheyMilk may be mixed with various fruit jams for use in spreads and toppings.

 

BREAKFAST SYRUP

BLEND in blender

1/2 cup sugar, 1/2 cup condensed 1st & Best WheyMilk (triple strength). COOK over low heat 1 minute. ADD 1/2 cup water.

STIR and cook 1 minute until thick and foamy. ADD vanilla or almond flavoring to taste. (Does not work well with maple flavorings)

 

MOCK HOLLANDAISE

Prepare thick white sauce as directed.

BEAT 1 egg yolk and add a small amount of the hot sauce to it.

STIR egg mixture into the remaining sauce. COOK 1 minute over low heat or in microwave. STIR in 1 tablespoon lemon juice

Serve immediately. It is especially good over vegetables.

 

CLAM CHOWDER

Make 4 cups hot 1st & Best WheyMilk, using hot clam juice instead of water.

ADD 1 cup dry 1st & Best WheyMilk. OMIT bouillon cubes. BLEND and proceed as in basic recipe.

When sauce is thickened, ADD cooked onion, potatoes, celery (as desired) and 2 cups minced or chopped clams. REHEAT until warm but do not boil.

Note: Better served second day.
